Our sailing visited Puerto Plata, San Juan, and St. Kitts, and included a mix of workshops, incredible dining, relaxing pool days, and unforgettable island excursions.
The Celebrity Apex ship is spectacular. This luxurious Edge-class cruise ship first launched in 2021, with the capacity to hold 2910 passengers. It offers a variety of top-notch amenities, multiple pools and hot tubs, numerous dining and bar options, theater, casino, nightclub, spa and gym, & exclusive Retreat area for suite guests.

Day 1: Embarkation Day on Celebrity Apex
We boarded the Celebrity Apex on Saturday and immediately fell in love with the modern design, open spaces, and calm atmosphere the Edge-class ships are known for. After checking into our stateroom and unpacking, we headed to the Sunset Bar on the 16th floor for a cocktail as we disembarked. We later explored the ship and kicked off our cruise with group welcome drinks at Eden—a beautiful venue with outdoor views and live acoustic music. The ambiance is an experience, it was one of our favorite locations on the ship.
For dinner, we headed to Cypress for a group dinner, one of the four main dining restaurants on Celebrity Apex. Cypress serves Mediterranean cuisine, particularly seafood. The restaurant is available for breakfast, lunch and dinner, with a smart casual dress code. It was the perfect relaxing start to our 7-night Caribbean cruise.










Day 2: Sea Day Workshops, Pool Time & Evening Entertainment
Sunday was a full conference and workshop day, starting with a 9:00 AM session where we presented. Afterward, we grabbed lunch at the Oceanview Café buffet and enjoyed a relaxing afternoon at the Apex pool deck with a book and a margarita.
Dinner was at Raw on Five, known for sushi and seafood. It was fresh and delicious, and they offered a great variety and mix of seafood. From there, we enjoyed:
- Live music at the main theater
- Cocktails at the iconic Martini Bar, complete with Daniel’s crowd-favorite drink show
- The evening production Tree of Life, one of Apex’s must-see entertainment offerings












Day 3: Puerto Plata, Dominican Republic
Our first port was Puerto Plata, Dominican Republic. We joined a guided city tour with Winston, exploring historic landmarks and scenic overlooks before heading to the beach. Our favorite stops included “Umbrella Street”, “Pink Street” and the Victorian District. We then headed to Playa Dorada to soak up the sun for the afternoon. Our beach stop included comfy lounge chairs with credible sangrias & chicken nachos—simple but SO good.

Back onboard, we enjoyed a group dinner at Normandy at 6:00, one of the specialty restaurants known for its French-inspired dishes and intimate atmosphere.










Day 4: San Juan, Puerto Rico
In San Juan, we spent the morning hiking in the rainforest—lush greenery, stunning overlooks, and the perfect amount of adventure. We both agreed, this was the highlight of our trip. Mineral-rich watering holes, crystal clear water, and breathtaking adventures. It was invigorating to hike El Yunche Rainforest and come to a trails end with crystal clear waters. We jumped into the crystal clear water from the cliff, slid down the natural rock slides, swung from the cliff on a man-made rope swing. It was the best day. After our hike, we stopped at Frutera Flores for smoothies, empanadas, and comforting home-style dishes.
That evening we booked Le Petit Chef, one of the most unique dining experiences on the Celebrity Apex. The animated storytelling and delicious menu make it a must-try, especially if you’re sailing with friends or family.















Day 5: St. Kitts Port Day
We spent Wednesday exploring St. Kitts. The Open Air Safari Tour of St. Kitts was a fantastic way to cover a lot of ground in a short amount of time. This safari style vehicle offered panoramic views of the island and Basseterre (one of the oldest towns in the Eastern Caribbean). Our next stop was Caribelle Batik Gardens at Romney Manor. We explored the grounds and saw the stunning 400 year old Saman Tree. As we headed to the beach, we had a spectacular view at the southern end of St. Kitts. Truly breathtaking. This overlook was picture perfect, it’s where the Atlantic Ocean meets the Caribbean Sea. Lastly, we headed to the beach for lunch and refreshments.
After a day wandering the port and soaking in the scenery, we headed back onboard for an 8:30 PM dinner on the Magic Carpet—a signature Celebrity dining platform that floats above the sea. Dinner was divine, including seafood appetizers, surf & turf and wine. It ended up being one of our favorite evenings of the entire cruise.















Day 6: Sea Day Workshops, Spa Time & Room Service Night In
Thursday (like most days) started with our favorite vanilla latte and pastry from Café al Bacio. Followed by a workshop from 9:00–12:00 featuring supplier spotlights, networking and team discussions. Afterward, we treated ourselves to a relaxing 1:30 PM spa appointment in the SEA Thermal Suite—an absolute highlight if you love saunas, aromatherapy rooms, or hydrotherapy spaces.
We spent the rest of the afternoon by the pool before ordering room service and having a cozy night in. Sometimes the quiet moments on a ship end up being the most restorative.






Day 7: Final Sea Day & Goodbye Dinner at Cosmopolitan
Our last full day aboard the Celebrity Apex was slow and relaxing. We took our time packing, grabbed one last coffee from Café al Bacio, and prepared for our 5:00 PM cocktail hour in the nightclub + farewell dinner at Cosmopolitan, another beautifully designed main dining restaurant. Cosmopolitan offers new American cuisine with global influences and a smart casual dress code. We toasted to the lifelong connections we made and wonderful memories we created together. It was the perfect closing chapter to a week full of great food, great company, and three stunning Caribbean ports.
